Golden Dosa with a Netherlands-Inspired Vegetable Topping

A crisp golden dosa gets a fresh European twist with a simple vegetable topping inspired by everyday Dutch cooking. Potatoes, carrots and onions come together with light seasoning to create a colourful and comforting topping.

What You’ll Need

  • 250–300 g paneer
  • ½ cup all-purpose flour
  • 1 cup breadcrumbs
  • 1 egg or an egg-free coating alternative
  • ½ tsp black pepper
  • ½ tsp red chilli powder
  • A pinch of turmeric
  • ¼ tsp garam masala
  • Salt to taste
  • Oil for shallow frying
  • Lemon wedges
  • Mint or coriander chutney for serving

Preparing the Vegetable Topping

Peel the potato and carrot and chop both into small pieces. Finely chop the onion and keep the leafy greens aside.

Heat a little oil in a pan and sauté the onion until soft. Add the potato and carrot, season with salt and pepper, and cook until the vegetables are tender while still retaining a little texture.

Add the leafy greens towards the end and cook for another minute or two. Keep the seasoning light so the natural flavours of the vegetables remain noticeable.

Making the Golden Dosa

Heat a dosa pan over medium-high heat. Pour a ladleful of Garam Foods Idly & Dosa Batter onto the centre and spread it into a thin, even circle.

Drizzle a little oil around the edges and allow the dosa to cook until the surface becomes golden and the edges turn crisp.

Bringing It Together

Spoon the warm vegetable mixture over one half of the dosa. Spread it gently and fold the dosa over the filling.

Serve immediately while the dosa is still crisp and the vegetable topping is warm.

Why the Netherlands-Inspired Twist?

Potatoes, carrots and onions are familiar ingredients in Dutch home cooking and are used together in traditional comfort foods such as hutspot. Bringing these everyday vegetables onto a dosa creates an interesting combination without trying to change either food tradition completely.

The result is a simple plate where South Indian dosa meets a little Dutch-inspired creativity.

For the dosa base, Garam Foods Idly & Dosa Batter brings the familiar fermented dosa experience, while the vegetable topping leaves plenty of room to make the recipe your own.

Try different vegetables depending on what you have at home, adjust the seasoning to your taste, and enjoy a golden dosa with a fresh twist.
